A Blanc de Blancs is something like the parade discipline among champagnes, because here the Chardonnay grape variety alone often has to provide the overall impression of all comp.

As the name suggests, this fine reserve is made from four grape varieties: Chardonnay, Pinot Blanc, Pinot Meunier and Pinot Noir.

Fine bouquet of ripe fruits such as pear and grapefruit, red-fruity, soft in the mouth with a fine, flattering mousseux and mineral finish, the style is rather reductive and elega.

Mouth-flattering mousseux and inviting red berry aromas supported by a pleasantly mild acidity with a balanced dosage, made from 100% Pinot Noir grapes.

Brut Nature, i.e. sparkling wine bottled without any rounding dosage. The base wine must not only be perfectly clean, but also have enough depth and complexity.

André uses 80% Pinot Blanc as well as Auxerrois and Chardonnay for this fine Crémant. He lets the grapes ripen for a relatively long time to achieve a pleasantly mild acidity.

Filigree, typical of the variety, straightforward, fruity and with a fine scent. From my own experience I can add: It develops positively over several years as it matures.

The Kimmeridge soils of the Chablis, made of gray clay mixed with lime, characterize this wine.

Nice nose with aromas of honeydew melon, pear, some fresh bread and a hint of brioche. On the palate full, fresh, the finest enamel, the subtle wood very well integrated.

From the grapes of old Chardonnay vines, Philippe Goulley presses this legendary Chablis, which has everything that makes this origin so unique.

The distance to the Petit is always understandable and Philippe Goulley is true to his style: very clear Chablis without any frills, almost puristic.
