Like all wines from Papari Valley, the Semi Sweet is fermented spontaneously, matured in a seven-level terrace system from Qvevri, not fined, not filtered and brought to the bottl.

Saperavi is also an autochthonous variety of Georgia: its name means something like dye grape, a reference to its deep dark color and reddish flesh.
