Description

After fermentation, the hand-picked Pecorino remains on the fine yeast at a controlled temperature for around 5 months. This gives it a complex bouquet with aromas of pear skin, bread crust and herbs such as sage and marjoram. On the palate it is soft with notes of cedar wood and almonds. It is spicy, salty and full-bodied on the finish.
