Perdixi is made from 70% of the Bovale grape variety, which is found almost exclusively in Sardinia. Ampelografically, it is at least closely related to the Spanish Graciano. The rest is Carignano (French Carignan). The Bovale is matured in 1,000l amphorae, the Carignano in steel tanks. Once again, Olianas skilfully combines modern and traditional vinification methods. Dark aromas of rum pot and black fruits, spices, a hint of liquorice and a balsamic character characterize this exceptional wine. Despite the dense structure and plenty of body, the tannins are already well integrated. A wine for discoverers!
