The small plot 'Le Moulin' is located in the north of the Cru Beaujolais Moulin-à-Vent. The Gamay grows here in an ideal east orientation on just 0.2 hectares. The bush vines planted between 1945 and 1950 are among the oldest at the Château des Jacques. They deliver an elegantly structured, concentrated and long-lasting wine, to which the soil, which is characterized by quartz sand, gives it its own energy and freshness, minerality and fullness. Cyril Chirouze cultivates the vineyard with a lot of manual work, using organic farming methods. In 2018, the first 'Le Moulin' was prepared, in a "Burgundian" way, with slow maceration of the mostly destemmed grapes, regular pigeage and a ten-month aging of the wines in (five!) used and new French oak barrels.
