From the Pedro Ximénez and Palomino grape varieties, well-known from the Sherry region, Bodegas Gómez in the Sierra Morena region produces a magnificent aperitif. Straw-yellow in color, with aromas of bitter almonds and dried fruit, beautifully dry on the palate yet with a soft texture, very complex and profound. A classic in Andalusia, it's enjoyed with tapas and can also be used very effectively in innovative cuisine.
