The Amontillado is one of the most complex wines of the D.O. Montilla-Moriles, a mix of Fino and Oloroso. First it ripens like a Fino under the protection of the flor yeast, then it is exposed to the air like an Oloroso. Wonderful characteristic amber color, the nose is intense, fragrant, with complex aromas of roasted hazelnuts, spicy notes such as cinnamon and cloves. Slightly salty notes on the palate with a long finish.
