Grown on porous volcanic rock and selected by hand, only fully ripe grapes are brought to the cellar. There, the unclarified must is spontaneously fermented and aged on the yeast in barrels for 30 months. The wine then rests for another 6 months in stainless steel before being bottled. Aromas of ripe peach and lemon combine with dark rock nuances, smoke and nuts.
