The Sauvignon Blanc parcels are located in close proximity to the winery and are characterized by a clay-loam mixture with solid limestone bedrock, which imparts a distinctive mineral structure to the wine. After partial leaf removal, the grapes were harvested at full ripeness to achieve a balanced ratio of fruit and structure. Fermentation took place over eight weeks, partly in stainless steel tanks and partly in oak barrels, followed by gentle bâtonnage to enhance depth and texture. Aromatically, the wine displays typical green notes of gooseberry and bell pepper, complemented by intense passion fruit on the palate, crisp acidity, and mineral intensity with a captivating finish.
