The Dreissigacker Chardonnay is made from hand-picked grapes that are grown in the biodynamically cultivated vineyards around Bechtheim and Westhofen in Rheinhessen. After hand picking, spontaneous fermentation takes place. The wine is aged 100% in wooden barrels, benefiting from the natural aromas and texture of the wood. The Dreissigacker Chardonnay undergoes seven months of aging on the full lees to develop additional complexity and texture. The wine is then stored on the fine lees until it is bottled.
