The Dreissigacker Chardonnay is made from hand-picked grapes grown in the biodynamically managed vineyards around Bechtheim and Westhofen in Rheinhessen. After the hand-picking, spontaneous fermentation takes place. The wine matures 100% in wooden barrels, which means it benefits from the natural aromas and texture of the wood. The Dreissigacker Chardonnay undergoes seven months of maturation on the full lees to develop additional complexity and texture. The wine is then stored on the fine lees until it is bottled.
