After aging for six years in oak barrels without topping up to compensate for evaporation, the Vin Jaune develops unique aromas. Natural evaporation is deliberately allowed, which would normally lead to oxidation. But thanks to a protective yeast veil on the wine, it does not oxidize. Instead, it develops a rich palette of aromas, including walnut, hazelnut, almond, toast, honey, cinnamon and gingerbread, which make it exceptional.
