Color: pale gold with greenish highlights
Scent: aromatically intense, multi-voiced bouquet of fresh almonds, marzipan, dried pineapple and beeswax, which develop into notes of cinnamon and pepper as it matures
Taste: firm and smooth on the palate, lush, but very lively with a distinctive acidic freshness right up to the finish with an elegant aftertaste of beeswax and a hint of ginger
Jadot's white Saint-Aubin is made from pure Chardonnay. Around 75 to 80 percent of this comes from small plots in Premier Cru locations in the appellation. All grapes are harvested at optimal ripeness, gently pressed, the musts fermented in oak barrels and the wines are aged in oak barrels for a good ten to twelve months after alcoholic fermentation has been completed, then bottled and left to rest for a little while before they are finally released for consumption. The vineyards of Saint-Aubin are located slightly elevated in the west of the Côte de Beaune, from where they tower over Auxey Duresses, Meursault, Puligny, Chassagne and Santenay. Roughly speaking, the sites and soils can be divided into two types: sites facing south-southeast are dominated by limestone and chalky soils, while sites facing more east have higher proportions of scree or scree and clay.
