Pouilly-Fumé lies on the right bank of the middle Loire. The vineyards of Villebois, located in Villiers and Barrois, are geologically characterized by marl containing oyster shells, limestone, and the famous flint, which also gave the wine its name, "Fumé" (smoky). The Sauvignon Blanc grapes are pressed as whole clusters, and the must is carefully fermented at cool temperatures. The young wine then matures for about six months in stainless steel tanks on its fine lees.
