For the pure Jaja de Jau Sauvignon blanc, the optimally ripe grapes are harvested in the cool night and early morning hours, immediately brought to the winery, fermented in contact with the berry skins in a cool stainless steel tank and the wines are then aged for around three to four months Fine yeasts are expanded (with regular stirring of the fine yeast storage) in order to complete the characteristic, juicy, fresh grape variety fruit of Sauvignon Blanc with even more juice and fullness.
In France, Jaja is called the little house wine, the popular drink for every day. Château de Jau translates it into Mediterranean drinking pleasure in the cheerful bottle design by artist Ben Vautier.
