Bourgogne Blanc Couvent des Jacobins is made from pure Chardonnay grapes, the grapes come from the entire Côte d'Or growing area. The grapes are gently pressed in modern presses and half of the must is then fermented and aged in stainless steel tanks and half in used oak barriques. In this way, the wine retains its fruity freshness in the stainless steel tank and gains the fullness and harmonious balance that the wooden barrel gives it. The Chardonnay was specially highlighted on the label because a Bourgogne Blanc is not of course made using a single variety. According to AOC regulations, the addition of Aligoté is permitted - and quite common.
The name Couvent des Jacobins is reminiscent of the old wine press in Beaune, which was once set up in the former Jacobin monastery. The historic building was later renovated and converted and is now used as an atmospheric setting for festive occasions. The Maison Louis Jadot, founded in 1859 by Louis Henry Denis Jadot, has its headquarters right next door.
