The Blanc de Blancs is the most limited of the Contratto spumantes. Giorgio Rivetti produces just under 12,000 bottles of this wonderful spumante, which he develops using the champagne process. The grapes come from the Alta Langa at an altitude of 830 meters. The harvest takes place at the end of August and the spumante is stored on the lees in the bottle for 4 years. Color: sparkling light yellow, fine perlage. Fragrance: fine nose with aromas of ripe, white fruits. Taste: very dry, strong, fresh acid, mineral.
