Our Rothenberg sparkling wine 2016 is being presented for the first time as a Brut Nature. Clear and radiant on the nose. Yellow fruits, acacia honey, and a hint of beeswax. On the palate, finely roasted almond and hints of white nougat. Citrus zest on the finish. Location & Terroir: The vineyard covers 44 hectares, of which 5.44 hectares are classified as "Grand Cru." With a south-southwest exposure and a slope of approximately 40%, it is arguably one of the beneficiaries of climate change. For the base wine, we require physiologically ripe and aromatic grapes. Our goal is exclusively healthy, aromatic grapes between 80° and 85° Oechsle with a stable acidity typical of Riesling. Therefore, we carefully inspect all parcels during the ripening period and, if necessary, hand-harvest individual bunches of grapes. The subsequent whole-cluster pressing is carried out with minimal pressure. A maximum of 65% of the juice yield is used; the press must is discarded. After the first fermentation, the base wine for the sparkling wine remains on the lees until the end of spring of the following year. This maturation is crucial for all the aromas to meld in the wine. Only then is the wine bottled for the second fermentation. This is followed by at least 36 months of lees aging in the bottle. Through several dosage tastings, the perfect partner for the final dosage is gradually identified. Exclusively fruity or lusciously sweet wines from the same vineyard are used.
