PetNat (short for pétillant naturel) or Méthode Ancestrale is the most original form of sparkling wine production. In contrast to other sparkling wines, only bottle fermentation takes place here without the addition of sugar and sulfur. This creates a unique complexity and depth as well as a naturally delicate mousse. Due to the uncontrolled fermentation of wild yeasts, each bottle has its own unique aroma.
