André uses 80% Pinot Blanc as well as Auxerrois and Chardonnay for this fine Crémant. He lets the grapes ripen for a relatively long time to achieve a pleasantly mild acidity. The extended bottle fermentation on the yeast gives it elegance. The yeast also protects the Crémant from oxidation, so a fine sparkling wine is produced with extremely little added sulphur.
