André uses 80% Pinot Blanc as well as Auxerrois and Chardonnay for this fine Crémant. It lets the grapes mature comparatively long for a pleasantly mild acidity. The extended bottle fermentation on the lees gives elegance. The yeasts also protect the Crémant from oxidation, making it possible to create a noble sparkling wine with extremely little added sulfur.
