Color: deep ruby to crimson red with a violet sheen. Fragrance: the bouquet contains fragrant aromas of sweet, ripe red and black fruits (blackberries, black currants, black cherries), underlined with delicate notes of toast and oak, roasted nuts and fine vanilla. Taste: soft and full-bodied with good depth and ripe, gently structured tannins, the juicy concentrated fruit with the slightly smoky roasted notes of the bouquet can also be felt on the palate, perfectly balanced with the fresh acidity, which gives the wine liveliness and a good length final. All grapes are picked at optimal ripeness, immediately brought to the winery, sorted, destemmed, gently ground and fermented completely in stainless steel tanks at controlled temperatures (around 29 °C). After fermentation, the wines remain on the mash for a further twelve days in order to concentrate a maximum of the intense, complex grape variety aromas from the berry skins and to develop particularly gentle tannins. All wines undergo malolactic fermentation, which gives them even more depth and smoothness. 50% of the wines are matured for 14 months in French oak barrels (20% new wood) to give the blend even more fullness and delicate toasted and roasted aromas to complete.
