The Penfolds BIN 600 has a garnet core colour with a cherry red rim. On the nose it is opulent and rich with a "European", spicy aroma profile that is sophisticated and inviting. Aromas of piquant marinated olives, feta and semi-dried tomatoes unfold. An exotic note of red Thai curry paste, freshly ground with a mortar and pestle, mixes in, accompanied by thyme flowers, lavender and violets. The scent of braised lamb with winter root vegetables, barley and mushroom risotto and beef consommé rounds off the bouquet.
On the palate the wine is clear and resolute with notes of malt and toast. Generous, sweet fruits dominate, with the sweet American oak enveloping the core of dark fruits and enclosing all the aromas of the wine. As the wood notes unfold, custard, goji berries, dates and a creamy chocolate malt note emerge. Oregano, hazelnut and cinnamon add additional spice to the palate. Structurally, the wine opens up rather than focusing on a finish. The tannins are prominent and the palate remains resolute.
