The grapes are harvested by hand and transported in small, 15kg boxes. Upon arrival at the farm, the grapes are sorted manually and visually and placed in stainless steel and cement tanks. There they are fermented using indigenous yeasts from our own vineyards at a maximum of 28 degrees Celsius. The cuvée then matures in French and American oak barriques for around 12 months.
