After hand-harvesting, the grapes are sorted again before undergoing alcoholic fermentation in concrete tanks. This is followed by malolactic fermentation in older French oak barrels and larger 2,500-liter casks. Finally, the wine is aged for 14 months in oak barrels and then for 3 months in stainless steel to harmonize before bottling. The nose is delicate, with aromas of white pepper, spices, and red cherries. These are complemented by undertones of rosemary and lavender. On the palate, it is fresh and lively with juicy tannins and a well-balanced structure, offering nuances of fruit, spices, and dried herbs. Elegant with a lingering finish.
