After hand-picking, fermentation takes place partly with whole bunches (about 30%), the rest with pressed grapes, in a combination of open concrete fermenters and submerged-lid fermenters. The wine then ages for 16 months in seasoned oak barrels, 2500-liter foudré barrels, and 400-liter second-fill barrels. A sophisticated yet powerful expression of Syrah, with complex aromas of mulberry, black cherry, and plum, complemented by cardamom, allspice, and a delicate floral note of lavender. On the palate, it is clear and elegant, with juicy dark fruits framed by fine, structured tannins. The long finish with white pepper and piquant spice notes adds depth and complexity.
