Nebbiolo is the flagship grape variety of Piedmont. It only thrives so well here; nowhere else in the world can you make noteworthy wines from it. It matures for at least twelve months in wooden barrels, where the previously strong acidity is broken down. Its wiry structure in particular makes it popular with connoisseurs. The delicate scent of wild roses and violets provides an exciting contrast to this.
