The Ginestra vineyard is 100% south facing. The soils consist mainly of clayey terrain. The age of the vines is 40 years. The harvest is a real late harvest, i.e. the grapes are harvested in mid-October. The grapes are carefully selected to obtain a product of great structure and longevity. The freshly harvested product undergoes the crushing-destemming process, followed by maceration for 22-28 days in special tanks that allow the noble components of the peel to be continuously released. When the optimal ratio between color and extracted tannins is achieved, bottling and the first decantation are carried out. The wine matured for 5 years in large barrels and 2 years in the bottle.
