The grapes are gently harvested by machine at the ideal harvest time. Maceration of the whole grapes to achieve a desired light rosé color is followed by gentle pressing of the grapes, slow, cool fermentation to produce wines characterized by fresh fruit aromas, lively acidity and moderate alcohol levels. The vinification is then rounded off by storage on the fine lees.
