The grapes are selected on the vine and picked by hand. They then macerate in stainless steel tanks for two weeks and then mature in cement vats for 12 months. The wine is unfiltered and bottled without adding sulfur. The complex nose is fine and delicate, but with a lot of depth. Black currant and blackberry with a hint of essential oils. On the palate, silky tannins, the fruit is accompanied by a nice pepper spice. The wine is labeled as Vin Méthode Nature (natural wine) according to the Syndicat de Défense des Vins Nature‘l association. As with all Amirault wines, biodynamic work is carried out according to Demeter guidelines.
