Quite captivating – contrary to what the above information on grape variety and origin might suggest – and evokes uniqueness and “otherness.” An admirable vitality and liveliness are immediately apparent: “As fresh as a new dawn in summer, such generosity is rarely discovered in winter!” A collection of aromas: liquorice root and black licorice, white pepper, black candy. The aforementioned candy seems to gradually develop a certain sharpness upon aeration. In the glass, further Middle Eastern/African spices slowly emerge. The wood remains in the background, discernible by a subtle smokiness and possibly a certain nuttiness (crushed Brazil nut, unsalted cashew). Different, but fascinating. Enticing...
PATTERNITY
An immediate realization – everything is perfect and balanced, in proportion, flawlessly formed, and generous.
Approaching the wine from the side, one recognizes "the whole before the parts." Shiraz envelops the Cabernet,
yet still supports the classic Cabernet graphite core.
The aromas described above meld together on the palate – with this wine, what you smell is certainly what you taste! A beautiful texture – although velvety, the grain of the tannins is still clearly discernible. These tannins (and the acidity) act as a bridge for the fruit. Yes, an engaging acid structure and vitality – similar to the delicious acidity inherent in many Japanese dishes. Length and finish – consistently smooth, with a mineral note on the aftertaste. Certainly a wine that makes you think, one could also say that stimulates the mind.
