At Paul Jaboulet Aîné, the harvest starts at the beginning of September with the white grapes. Then it's just a matter of waiting until the red varieties richly reward this patience: with deeply colored grapes, ripe, silky tannins, balance, structure and finesse. In order to concentrate a maximum of the deep red color and juicy aromatic fruit, the grapes for the Secret de Famille Cuvée are traditionally allowed to ferment very slowly on the mash at controlled temperatures and then the wines are aged purely in stainless steel tanks.
