As is typical in Beaujolais, maceration semi-carbonique is used here, i.e. a short, introductory carbonic acid maceration takes place in a closed tank. Fermentation is completed in open wooden fermenters and takes a total of 12-20 days. For Maceration Carbonique, the grapes must reach the cellar whole and undamaged. After fermentation, the wine ages in oak barrels for 8-10 months.
