Kuyen means moon in the indigenous language and the lunar calendar also plays a major role in the development of the wines. The grapes for this complex cuvée of Syrah, Cabernet, Carignan and a little Petit Verdot, which has a lot of substance and a wonderfully polished tannin structure, are hand-picked. And after a rather long but gentle fermentation process, the wines mature for a good year in partly new, partly used French barriques in order to fully develop.
