La Côte aux Enfants Champagne is made from 100% Grand Cru Pinot Noir and comes from the only La Côte aux Enfants plot. This champagne has been aged in the cellar with a natural cork for twice the time required by the appellation. The dosage is low, 8 grams per liter. The 2013 vintage was marked by a succession of special climatic conditions: a rainy spring combined with a hot summer and the strongest sunshine ever recorded in Champagne. Despite these severe constraints, this harvest offers high quality grapes, particularly for the Grand Cru d'Aÿ.

As an accompaniment to fine veal escalopes, tournedos with shallot confit and red wine sauce, but also to poultry and duck as well as Tomme de Savoie and Brie de Meaux.

Its history:
Originally, the red wines made the reputation of the Champagne wine-growing region. The Pinot Noirs from the municipality of Aÿ were Henry IV's favorite wines and were among the most popular at the French court. La Côte aux Enfants comes from a very steep plot of land in the immediate vicinity of Aÿ. Jacques Bollinger patiently rebuilt it at the beginning of the 20th century, even though it was divided among more than fifty owners at the time! Bollinger now owns 4 contiguous hectares in this location. Since 2009, these plots have been cultivated according to the principles of organic farming.
