Unique single-vineyard champagne made from 80% Pinot Noir and 20% Chardonnay. The aging in oak barrels gives the base wine a fruity fullness with a hint of juiciness and bite. The bottle aging on the yeast refines this delight and ensures a delicate, very fine perlage. On the nose, some mineral chalk, complemented by liquorice, elderberry, lemon and apple. Concentrated on the palate, wonderfully fresh, with a silky texture and intense fruit. Its powerful character also makes it a perfect accompaniment to dishes that you wouldn't normally associate with champagne, such as entrecôte with pepper sauce.
