The 2017 edition of the ABYSS vintage champagne was sunk in August 2021 for 12 months at a depth of 60 m off the Atlantic coast of Brittany. Since the contents of the bottle develop particularly well under these conditions, but no label in the world can withstand seawater, the ABYSS always comes without a label, but with a noble gift box and bottle tag. After opening, intensive mineral notes of iodine and chalk, which combine pleasantly with a fruity bouquet of apricots, red apple and rhubarb. Essential notes of green tea and jasmine. Very complex nose: if you give it some time to breathe, notes of lime, liquorice and a hint of cassis are added. A very clear, precise champagne with a gentle, creamy perlage. The racy, citric acidity wonderfully complements the very long-lasting salty-iodine aftertaste of the ABYSS. A dream with oysters or sashimi.
