The 2018 cuvée of the ABYSS vintage champagne was submerged in 60 m of water off the Atlantic coast of Brittany for 12 months in the summer of 2022. Since the contents of the bottle develop very well under these conditions, but no label in the world can withstand seawater, the ABYSS always comes without a label, but with an elegant gift box and bottle tag. Upon opening, intense maritime notes of sea spray with a hint of menthol blend pleasantly with a fruity bouquet of apricots, yellow apple, and rhubarb. Ethereal nuances of green tea and mint. A very complex nose: if allowed some time to air, notes of lemon, licorice, and a hint of cassis emerge. Elegant perlage with great finesse. The racy, citrusy acidity wonderfully complements the long-lasting salty-iodine finish of the ABYSS. A dream with oysters.
