Bollinger's Special Cuvée comes first in its commitment to quality. Predominantly Premier and Grand Cru wines are blended into the cuvée. After each harvest, Bollinger selects some of the wines that best characterize the vintage as reserves
Store them in reserve magnum bottles under natural cork for five to fifteen years. In order to guarantee the quality and freshness of the “vins de réserve” over the years, light bottle fermentation is permitted. This method is unique in Champagne. The assemblage of the Special Cuvée contains 5 - 10% “vins de réserve”.
Tasting profile:
Appearance: Golden color, a clear sign of red grape varieties, fine perlage.
Bouquet: Complex aromas of ripe fruits and spices with nuances of baked apples, apple compote and peaches.
Taste: A harmonious combination of structure, finish and intensity with a fine, velvety perlage. The aromas are reminiscent of pears, brioche and spices with nuances of fresh nuts.
Food recommendation:
A good accompaniment to fish, especially sushi and sashimi, crustaceans and shellfish, poultry and white meat, parmesan cheese and ham.

His story:
In 1911, George Bollinger, a British representative of the house, gave it the name Special Cuvée - English spelling, without accent. He felt that the expression “Brut sans année” was not appropriate for such a fine champagne. More than a hundred years later, the name of this iconic champagne still stands for tradition and joie de vivre.
