La Grande Année is Bollinger's reference to the great vintages of Champagne. The base wines, which come exclusively from Grand and Premier Cru sites, are fermented entirely in wooden barrels. They mature under natural cork for at least 6 years, usually longer on the yeast. The bottles are then shaken and disgorged by hand according to old tradition.
Tasting profile:
Appearance: A shimmering golden color that reflects the maturity of the wine, but also Bollinger's production methods.
Bouquet: A fruity, clear and finely iodized aroma. To start with, aromas of cherry and lemon in combination with quince and bergamot. Then notes of hazelnut, almond, mirabelle and peach round off the perfectly coordinated aromas of the champagne.
Taste: A fine and intense tingle develops on the palate, followed by a pleasant lightness and a balancing fine acidity. Its very fine texture and salty finish ensure a long finish on the palate, rounded off by complex aromas of fruit and citrus. A light wine that gradually unfolds and finally reveals its full potential and intensity.
Food pairing:
Mediterranean bass, Grenaille potatoes and zucchini flowers. Scampi ravioli, foie gras and fleur de sel. Fried scallops with citrus butter and Kombu Royal.

Its history:
La Grande Année is the epitome of the savoir-faire that has always been handed down at Bollinger. It matures exclusively in small used oak barrels. Champagne Bollinger has never given up this traditional method because it promotes the development of extremely fine aromas. After a long period of maturing on the yeast, each bottle is still riddled and disgorged by hand.
