The color is light golden and appears shiny, with greenish reflections underlining its elegance. The scent of the Mondavi Private Selection Chardonnay is of a fragrant, aromatic nature and carries a hint of exoticism. One notices notes of citrus blossoms, pineapple and peach, which harmonize with each other in a seductive way. They are delicately underlined with the slightly smoky nuances of barrel maturity, which reveal themselves in the form of vanilla, toast and caramel. The taste is extremely well balanced on the palate. It presents itself lush, soft and full-bodied, which amounts to a sensual pleasure. At the same time it is powerful and supple, giving it a juicy fullness. The balance between acidity and sweetness is excellent and gives the wine a pleasant harmony. The finish is long and lingering, which demonstrates this wine's perfect quality.
All grapes are harvested at optimal ripeness, immediately brought to the winery and carefully pressed whole in order to maximally preserve the purity and freshness of the varietal fruit. 30% of the musts are fermented directly in the barrel, then undergo malolactic fermentation, which gives the wines their fine melting, and are finally aged for eight months in American and French oak barrels to further emphasize their dense texture, structure and complexity. The remaining 70% of the must is vinified entirely in tanks to emphasize the juicy fruit and freshness of the grape variety. Before being blended into the final blend, all wines, both in the tank and in the barrel, rest on their fine lees for eight months, with regular stirring of the yeasts giving the wine even more aromatic fullness, strength and suppleness.
