The Malbec vines for Dieter Meier's Puro grow in the high-altitude vineyards of Luján de Cuyo. The biggest advantage of this altitude is the cool nights. Because they delay the natural ripening process and thus allow the grapes to reach their full physiological ripeness, developing a harmonious balance of alcohol-tannin aromas and at the same time maintaining fresh acidity. Dieter Meier cultivates his vineyards using organic farming methods; the extremely dry soils are irrigated drop by drop with meltwater from the Andes. The grapes for the single-variety Puro Malbec are harvested at the end of March, immediately brought to the winery, fermented in stainless steel tanks at controlled temperatures of 27 to 28 °C and aged without wood, purely in stainless steel tanks, in order to maximize the juicy freshness of the grape variety fruit in the wine preserve.
