Our signature wine. This organic estate wine is one of the most important wines of our family winery. The grapes were selectively harvested by hand. The vines are mainly rooted in mineral limestone soils, which gives this wine a wonderfully chalky spiciness. After natural spontaneous fermentation, the wine was aged slowly and gently in steel tanks. Ripe pear notes, with aromatic elderberry, cassis notes spicy with air and lots of salted lemon. Complex and radiantly clear on the palate
